Easy Roasted Air Fryer Carrots and Potatoes

These easy roasted air fryer carrots and potatoes are a great quick option if you’re stuck on what to make as a side dish for dinner. They are full of flavor, simple, and delicious. They also come together in less than 25 minutes. The whole family will approve, because I mean who doesn’t like roasted potatoes?!

REASONS YOU’RE GOING TO LOVE THIS RECIPE

Easy Prep – If you’re anything like me (a stay at home mom of 2) the last thing you want to do in the evenings is slave in the kitchen to make everyone a complicated meal. I’m a huge fan of easy yet elevated dinners! With these easy roasted air fryer carrots and potatoes you’re pretty much just rough chopping everything, tossing them in a bowl with some spiced and oil, then throwing them in the air fryer to cook!

A Healthier Option – Air frying food has been a game changer for many recipes. Long are the days you throw things in a big pot of messy frying oil. I’m not one to judge a potato, so I consider them fairly healthy, and carrots obviously are great for you. I consider this a win win in the healthy side dish option.

Kid Friendly – Not everyone likes a carrot, but roasting them brings out their natural sweetness, so they are more likable in the kid department. As for potatoes, I’m sure most kids will approve of that!

WHAT YOU’LL NEED TO MAKE THESE EASY ROASTED AIR FRYER CARROTS AND POTATOES

SUGGESTED EQUITMENT YOU MAY NEED:

  • Strainer – You need to give your potatoes a nice rinse before cooking them.
  • Cutting Board – You are going to be doing some cutting so bust out the cutting board, or if you want to skip on the dishes opt for a paper plate. (guilty… sometimes)
  • Air Fryer Parchment Paper Liners – Again, being a mom the less you have to clean the better! I love these air fryer parchment paper liners because they reduce the mess and they also have holes in them to keep the air moving around your food. I use them all the time for salmon!
  • Large Bowl – These are my all time favorite bowls in the kitchen. You’ll need a large bowl to toss your carrots and potatoes in the oil and seasoning before roasting them in the air fryer.

INGREDIENTS YOU’LL NEED TO MAKE THESE EASY ROASTED AIR FRYER CARROTS AND POTATOES

  • Potatoes and Carrots – I used a small package of the red and white baby potatoes, but you can use whatever regular potato your prefer. I also used large carrots, but if you’re a kid friendly family like me, you likely have baby carrots on hand and that will work perfectly fine as well.
  • Oil – Some great options for oil in the air fryer are canola oil, olive oil, sunflower oil, and avocado oil. With the air fryer typically cooking at a higher temperature, you want to use a high smoke point oil on your food. I always have olive oil and avocado oil on hand.
  • Spices – I used paprika, onion powder, garlic powder, dried parsley, kosher salt, ground pepper. You can use any of your favorite spices though. I’m also a big fan of chili pepper.

HOW TO MAKE THESE ROASTED AIR FRYER CARROTS AND POTATOES

Clean and rinse your carrots and potatoes in a strainer to remove any unwanted dirt and such.

Then If you are using big potatoes cut them in half then the halves into quarters. Since I used baby potatoes I just cut them in half. Just make sure they are bite sized. Also cut your carrots into slightly smaller pieces than your potatoes.

When you air fry carrots and potatoes the potatoes will become tender faster than the carrots, so to avoid having hard carrots cut them a but smaller.

When you are finished with the chopping, put the potatoes and carrots in a large bowl, drizzle with the oil of your choice and sprinkle the seasoning over everything. Use a spoon of your good old hands to mix everything together to get it nice and evenly coated in the oil and seasonings.

Place a air fryer parchment paper on the bottom of your air fryer rack if you wish and dump the carrots and potatoes in a single layer onto the tray. Depending on how big your air fryer is you may need to cook these in to batches. I use a pretty large one so I used 2 trays.

Cook at 400℉ for about 20 minutes or until the carrots are tender.

Garnish with some parsley and serve hot, and enjoy!

THE BEST WAY TO STORE AND REHEAT THESE ROASTED AIR FRYER CARROTS AND POTATOES

Store them in an air tight container in the fridge for up to 4 days.

To reheat them you can toss them back in the air fryer for about 5 minutes or heat them up in the microwave.

What type of oil is best for the air fryer?

Typically since the air fryer cooks at a higher temperature you want to use an oil with a high smoke point to avoid burning your food.

Some oils with a higher smoke point that would be good for air frying:

  • Canola Oil
  • Sunflower Oil
  • Olive Oil
  • Avocado Oil

Should you parboil potatoes before roasting?

This is not needed for this recipe. Although parboiling can help with creating a crispier crust in some cases, with these being roasted in the air fryer they wouldn’t have mush time to develop a crust as well as if they were roasting in the over for more than 30 minutes.

Why don’t my potatoes get crispy in the air fryer?

Make sure you have room around your potatoes for optimal air flow and they are all on a single layer, this will ensure you get crispy edges on all sides.

I don’t have a basket air fryer, but I can assume it can be a little tedious to keep everything on a single layer with such little space, but that’s the best option to get crispy sides. Also make sure you are using the right kind of oil.
