Crockpot Chuck Roast With Potatoes and Carrots – A Warm Classic Comforting Easy Dinner!

There’s nothing more comforting on a chilly day than a crockpot meal. This crockpot chuck roast with potatoes and carrots is extra juicy, loaded with flavorful carrots and potatoes, lots of beef broth and tasty seasonings. Just all around perfect in my opinion!

Truthfully, you only need a handful of ingredients to bring this meal together. I’m all about simple meals with few ingredients. Nobody has time to stand over the stove and cook a complicated meal anymore! I hope you find this recipe a go-to from now on!

The possibilities are endless.

WHAT YOU’LL NEED TO MAKE THIS CROCKPOT CHUCK ROAST WITH POTATOES AND CARROTS

SUGGESTED EQUITMENT YOU MAY NEED:

  • Crockpot – You’ll obviously need a crockpot for this recipe. I’m sure you can do it in the oven but for the sake of time and energy were dumping this recipe in the good old crockpot!
  • Liquid Measuring Cup – Having a 2 cup measuring glass is super handy to have around the kitchen. Not only do I use it for so many recipes, I love using it to make tea in the microwave. So handy!
  • A Cutting Board – You’ll have some light chopping for this recipe. I may or may not cut a few things on top of my granite countertops, but a cutting board is always the better answer.

INGREDIENTS YOU’LL NEED TO MAKE THIS CROCKPOT CHUCK ROAST WITH POTATOES AND CARROTS

  • Chuck Roast – You can probably get away with using pretty much any type of roast here, but this was what I had on hand at the time. Mine was only a couple pounds too, it wasn’t very big & it was frozen when I cooked it!
  • Carrots – I also have baby carrots on hand most of the time, but if you have “the big” ones that’s perfectly fine here too.
  • Russet Potatoes or Baby Potatoes – I used those little potatoes because I had some leftover in the pantry, but russet potatoes are normally a great go-to for this recipe.
  • Beef Broth & Water – The flavor of the beef broth really brings out that bold salty flavor you would expect with a crockpot chuck roast with carrots and potatoes.
  • Onion – You can really use any type of onion here. I always have red onions in my pantry, so that’s what I used. Feel free to use whatever onion you have or prefer.
  • Worcestershire Sauce – The salty smokey element this brings to the dish is needed!
  • Minced Garlic & Seasonings – If you don’t have minced garlic feel free to use garlic powder. I also threw in Salt, Pepper, Dried Oregano, Dried Parsley, and Dried Basil. You could also maybe use an Italian Seasoning blend if you don’t have the individuals. This crockpot chuck roast with potatoes and carrots is very forgiving with your final choice in seasonings.

HOW TO MAKE THIS CROCKPOT CHUCK ROAST WITH POTATOES AND CARROTS

  1. Place your chopped carrots or baby carrots in the bottom of the crockpot.
  2. Then place your roast on top of the carrots
  3. Then using your cutting board cut your potatoes and onion into quarters or chunks of your desired size and place them around the roast leaving the top of the roast uncovered.
  4. Then season everything with the Salt, Pepper, Minced Garlic, Dried Oregano, Dried Parsley, and Dried Basil
  5. Then with your liquid measuring cup pour in the beef broth, water, and worcestershire into the crockpot and place the lid on top.
  6. If you are cooking a frozen chuck roast, cook it on high for about 6 hours. If you are cooking a thawed chuck roast, you can cook it on high for about 4 hours or on low for about 5-6 hours. You’ll know when it’s done when you can take a fork and easily break it apart and it’s soft.
  7. The last step is to ENJOY!

THE BEST WAY TO STORE THIS CROCKPOT CHUCK ROAST WITH POTATOES AND CARROTS

I personally like to store the meat in it’s own separate container so I can repurpose the meat with a different meal if I wish to. Like I suggested earlier, you can take this leftover meat and turn it into BBQ sliders with a homemade slaw the next day.

You can also simply store it all together in an airtight container in the fridge for up to 5 days.

Ingredients

  • 2-3 lb. Chuck Roast or any type of roast you desire
  • 3 cups Baby Carrots / Chopped Carrots
  • 3 cups Russet Potatoes or Mini Potatoes cut into chunks

  • 2 tbsp. Kosher Salt
  • 2 tsp. Ground Black Pepper
  • 3 tbsp. Minced Garlic or garlic powder

  • 1 tbsp. Dried Basil
  • 3 cups Beef Broth
  • 1 cup Water

Instructions

  • Then with your liquid measuring cup pour in the beef broth, water, and worcestershire into the crockpot and place the lid on top.
    3 cups Beef Broth, 1 cup Water, 3 tbsp. Worcestershire Sauce
  • If you are cooking a frozen chuck roast, cook it on high for about 6 hours. If you are cooking a thawed chuck roast, you can cook it on high for about 4 hours or on low for about 5-6 hours. You'll know when it's done if you can take a fork to easily break it apart and it's soft.
